Why A2 Ghee is Better Than Regular Ghee

Why A2 Ghee is Better Than Regular Ghee

Not All Ghee Is Created Equal

Walk into any grocery store and you'll find shelves lined with ghee. But here's what most brands won't tell you: the type of cow, the breed, and the method of making ghee makes an enormous difference to its nutritional value and health benefits.

At Divyorganic, we make Desi A2 Bilona Ghee from indigenous Indian cow breeds — Gir, Nagori, and Kankrej. Here's why that matters.

A1 vs A2 Protein: The Key Difference

Milk contains a protein called beta-casein, which comes in two variants: A1 and A2.

  • A1 protein is found in milk from crossbred and foreign cow breeds (Holstein, Jersey). When digested, A1 protein releases a peptide called BCM-7, which some studies link to digestive discomfort and inflammation.
  • A2 protein is found in milk from indigenous Indian cow breeds (Gir, Nagori, Kankrej, Sahiwal). A2 milk is easier to digest and does not release BCM-7.

Ghee made from A2 milk retains these superior nutritional properties.

The Bilona Method: Ancient Wisdom, Modern Purity

Regular commercial ghee is made by directly heating cream or butter at high temperatures — a fast, industrial process that destroys many nutrients.

Our Bilona method follows the traditional Vedic process:

  1. Fresh A2 milk is curd-set overnight
  2. The curd is hand-churned using a wooden Bilona (churner)
  3. The resulting butter (makhan) is slow-cooked on a low flame
  4. Pure, golden ghee is carefully separated

This slow process preserves natural vitamins (A, D, E, K), CLA (conjugated linoleic acid), and butyric acid — all of which are largely destroyed in commercial ghee production.

Health Benefits of A2 Bilona Ghee

  • ✅ Easier to digest — ideal for people with lactose sensitivity
  • ✅ Rich in fat-soluble vitamins A, D, E & K
  • ✅ High in butyric acid — supports gut health and reduces inflammation
  • ✅ Contains CLA — linked to healthy weight management
  • ✅ Boosts immunity and supports brain function
  • ✅ High smoke point (250°C) — safe for high-heat cooking

How to Identify Real A2 Bilona Ghee

Genuine A2 Bilona Ghee has a grainy texture when solid, a deep golden colour, and a rich, nutty aroma. If your ghee is perfectly smooth and pale yellow, it's likely commercially processed.

Divyorganic's A2 Bilona Ghee is made in small batches, with full traceability from cow to jar. No additives, no shortcuts.
